So after the holidays I found I had extra peanut butter from all my holiday candy making and decided to use it for baking. I love peanut butter cookies, but I also love oatmeal cookies so I decided to combine my favorites into one chewy moist cookie. I hope you enjoy these as much as I do! 1 1/2 c. brown sugar 1 c. creamy or chunky peanut butter 1 stick softened butter ¼ cup butter flavored Crisco 1/3 c. water 1 egg 1 tsp. vanilla 3 c. oats, uncooked 1 1/2 c. all-purpose flour 1/2 tsp. baking soda Beat sugar, peanut butter and butter until fluffy. Blend in water, egg and vanilla. Add combined dry ingredients. Mix well. Chill dough about 1 hour. Heat oven to 350 degrees. Shape dough to form 1 1/2 inch balls. Place on ungreased cookie sheet; flatten slightly. Bake 12 to 14 minutes or until edges are golden brown. Cool 1 minute on cookie sheet. Makes 4 dozen.

On a recent trip to Seattle to visit my grandchildren I picked up a few bags of dried cherries at the airport. Washington is known for their cherries and I love eating the sweet dried fruit. I recently discovered pumpkin spice chips, similar to chocolate chips, in the grocery store and created this double pumpkin spice cookie as it combines the chips with a pumpkin spice cookie. The aroma alone is enough to make you think of fall, turning leaves, and gathering pumpkins with the family. Ingredients
Ingredients:
Heat oven to 350ºF. In large bowl, beat brown sugar, egg, oil, applesauce and vanilla on medium speed of electric mixer until combined. Add combined flours, baking soda and salt; beat on low speed just until blended. Stir in oats and “mix-ins.” Drop dough using a tablespoon as your measuring device, or a small cookie scoop if you have one, about 2 inches apart onto ungreased cookie sheets lined with parchment or Silpat. Bake 9 to 10 minutes, until light brown. (Do not overbake. Centers will appear soft.) Cool 1 to 2 minutes on cookie sheets; transfer to wire racks. Cool completely. Store tightly covered. |
