St. Patrick's day is this month and there are lots of fun green and minty recipes out there. Here is a twist on a basic cake ball that incorporates the mint-flavored Oreo cookies you see in the store. These remind me of the Girl Scout thin mint cookies only as a cake pop! Ingredients:
1 package Mint Oreos, Double Stuffed 1 box prepared chocolate or white cake mix plus ingredients needed to make the cake such as eggs, oil and water, cooled and crumbled 1 tsp. mint extract 8oz cream cheese, softened 16 oz (2 Cups) melted chocolate such as Wilton’s for dipping (+ 1TBS shortening if needed) Sprinkles, extra chocolate for decorations if desired Directions: 1. Bake cake according to package directions and allow to cool. I made mine the day before. 2. Crush with a rolling pin or use a food processor to pulverize Oreos. Make them as fine or coarse as you’d like it. I did about half very fine and half to small bits. 3. Using your hands or fork crumble up about half of the cake and add to the Oreo crumbs. 4. Add the softened cream cheese and the mint extract and mix until combined. If your mixture is too wet add more cake crumbs until you get a consistency that you can roll into balls. 5. Roll into bite-sized balls. Set them in the freezer on a wax paper lined cookie sheet for at least 1 hour, but overnight is fine too. 6. When the cake balls are cold, melt chocolate in a glass bowl in the microwave starting at 1 minute on high power, then stir and heat for 30 second intervals stirring in between until all the chocolate is melted and add up to 1 TBS shortening if needed (shortening will help thin chocolate out which makes the dipping easier). 7. Dip your Oreo cake balls into the chocolate and let them set up on wax paper until firm. Garnish with holiday sprinkles such as shamrocks or drizzle green chocolate on top. This is a fun activity to do with kids. You can even use green tinted melting chocolate wafers by Wilton if you want a real St. Patrick's day theme. Enjoy!
